The Cuisine

Our cuisine is based on the row materials that we produce in our Farm: cereals, fruits, legumes, vegetables, eggs and farm animals.

We buy what we don't produce from farms of our region,possibly choosing those who use organic methods of cultivation and that ensure high quality standard.



Extra-virgin olive oil, mushrooms, and truffles, fresh and seasoned cheese. Meat of local production with "Marchigian" breed cattle that gives particular quality and value to the "Fiorentina steak", to the "Tagliata" or "Filetto" etc.


Everything is home-made: tagliatelle, ravioli,passatelli, gnocchi, bread, pizza, and cakes following the recipes of our tradition.



We offer a menu of typical specialities according to the seasons and also vegetarian menu on demand.
Our cellar offers the best wines from Le Marche.



Spring - Summer

Appetizers:
Ham and figs, fried elder flowers, salad with flower petals, pork delicatessen and typical cheeses.
First course:
Ravioli with nettle, passatelli with wild asparagus, gnocchi with duck sauce, tagliatelle with stridoli.
Second course:
Roast sucking-pig, lamb with artichokes, mint tagliata-veal, chicken alla diavola.
Vegetables:
Vegetables au gratin, artichokes with parsley and garlic, papatelle with olive oil and garlic.
Desserts:
Mousse with ricotta cheese and lemon, strawberry tiramisù, semifreddo with macaroon, lemon or coffee grated-ice drink.






 


 

Autumn-Winter

Appetizers:
Rosemary cake with sliced ham, vol-au-vent with ricotta cheese and rucola, crostini with veal liver and truffle, typical cheese tasting.
First courses:
Tagliatelle with porcini mushrooms, ravioli with white truffle, polenta with pheasant à la creme.
Second courses:
Bitter-sweet wild boar, braised-beef with porcini mushrooms, veal fillet with white truffle, turkey with chestnuts.
Vegetables:
Roasted potatoes, chicory with capers and anchovy, cauliflower mousse, grilled wild chicory.
Desserts:
Chocolate mousse with whipped cream, hazel-nuts cake, fruit tarts.

The wines of " Le Marche"

There are more than 20.000 hectars of vineyards in the Marche, with about 2.000.000 hectolitres of wine producted every year. Among these wines, over 30% are D.o.c. and this percentage is increasing every year. Some denominatious have been renowed, introduced (like d.o.c. Esino) and increased in the last year, just like the extension of typologies in the D.o.c. of Colli Pesaresi, or to that of Verdicchio (Castelli di Jesi and Matelica). The denominations of Rosso Piceno and Falerio have been changed a bit from the vintage of 2001. And also there are the new D.o.c. of Offida ( with four different tipologies) and Colli Maceratesi Red. For the first time in the Marche, it has been instituded a D.o.c.g. concerning the Vernaccia di Serrapetrona wich is a very peculiar red spumante, completely marchigian. Moreover, most of the denominations, and thus of producted wines, is based on an important and rich biological difference with the valorization of vine-tendril autochthonous both whites and reds. In the Marche we can also find vine-tendril like: Merlot, Black Pinot, Cabernet sauvignon, Barbera, Syrah, White Pinot and Grey Pinot, Chardonnay, Sauvignon, Grechetto to obtain excellent wines, sometimes authentic outsiders. And we should't forget that a considerable number of products maintains a reasonable relation between quality and price.
